If you’re still ordering Margaritas on autopilot, it might be time to look sideways — at the Paloma. Lighter, brighter, and arguably more refreshing, the Paloma is the unsung hero of tequila cocktails. And with National Paloma Day landing on 22nd May, there’s no better time to give this grapefruit-forward classic the love it deserves.
What is a Paloma?
At its core, a Paloma is a simple mix of tequila, grapefruit, lime, and soda. But don't let the simplicity fool you — the flavour profile is punchy, zesty, and unapologetically quenching. Traditionally served long over ice with a salt rim, the Paloma balances the earthy bite of agave with the bittersweet tang of citrus in a way that feels made for sipping in the sunshine (even if that sunshine is stubbornly British).
Why You Should Be Drinking More Palomas
1. It’s Effortlessly Refreshing
While the Margarita brings acidity and boldness, the Paloma is its cooler, laid-back cousin. The bubbles from soda or grapefruit soda add lift, making it a go-to for warm days, long evenings, or any time you want something that doesn’t feel like a chore to drink.
2. It’s Surprisingly Versatile
Want to riff on it? Swap tequila for mezcal for a smoky take. Use a chilli syrup to add a little heat. Add a fruit liqueur like Prickly Pear or Raspberry for an elevated twist — it's a cocktail that can be easily adapted to your palate.
3. It Lets Tequila Shine
In a Paloma, tequila doesn’t get buried. The relatively low sugar content and bright acidity allow the nuances of your chosen spirit to come through. Whether you're using a clean Blanco or something with a bit of oak from a Reposado, the Paloma lets the agave sing.
4. It’s Criminally Underrated
Despite being Mexico’s actual most popular tequila cocktail, the Paloma still lives in the shadow of the Margarita outside of Latin America. But insiders know: it’s the bartender’s drink of choice when the shift ends and the sun’s still out.
Our Take on the Paloma
At The Natural Philosopher, we’ve got a bit of a soft spot for the Paloma — We keep our classic Paloma pretty simple but you'll usually find a twist somewhere on the menu too.
How to make a Paloma
In a tall glass add 50ml of good quality 100% agave Tequila. We prefer a Blanco Tequila for the earthy vegetal and pepper notes it brings, but if you fancy something smoother with aged vanilla notes then a Reposado will be delicious too.
Next add 15ml of freshly squeezed Lime juice. Freshness is key as you want the zing of the acidity.
Finally top just under halfway with Three Cents Grapefruit Soda- arguably the best grapefruit soda on the market for flavour, zing, and colour! Gently add ice so as not to lose too much of the fizz, and then enjoy! And if you fancy playing around with flavours add 10ml of liqueur or syrup in and a touch more lime to keep balance. You can also run a lime wedge around the rim of the glass before hand and dip in salt or Tajin for extra flavour!
